Mangoes are ripe first by the color, which turns more and more yellow, plus as the fruit ripens it becomes softer.

🥠Stages of Mango Ripening:
1. Unripe (Deep Green)

Color & Appearance: Uniform, deep, vibrant green, often with a smooth, firm skin.

Texture: Extremely hard and firm to the touch, almost like an apple. There is no give when gently squeezed.

Taste & Aroma: Very sour and acidic due to high starch content and low sugar. Not suitable for fresh eating; often used for pickles or chutneys.
2. Breaking Green (Green-Yellow Transition)

Color & Appearance: The first signs of color change appear, usually a pale yellow or blush of orange begins to spread from the stem end or the shoulders of the fruit. Patches of green remain.

Texture: Still very firm, but you might feel a slight yield when squeezed firmly.

Taste & Aroma: The starch is starting to convert to sugar. The taste is still predominantly tangy-sweet, with a crunchy texture.
3. Partially Ripe (Half-Green/Half-Yellow)

Color & Appearance: The yellow or orange coloration is more dominant, usually covering about half or more of the fruit's surface.

Texture: Slightly soft to the touch; the fruit feels springy but not tender.

Taste & Aroma: Noticeably sweeter, though still with a pleasant tartness. A faint, sweet fruity scent is usually detectable at the stem end.
4. Fully Ripe (Golden Yellow/Orange)

Color & Appearance: The skin is predominantly a rich, vibrant golden yellow, orange, or a deep sunset blush (depending on the variety).

Texture: Tender and soft, but not mushy. It yields easily to gentle pressure. This is the optimal eating stage.

Taste & Aroma: Intensely sweet with low acidity and a rich, complex mango flavor. A strong, fragrant, and characteristic sweet aroma wafts from the stem.
5. Overripe (Dark Spots/Wrinkled)

Color & Appearance: The surface darkens, sometimes developing brown or black spots ("sugar spots"). The skin may appear dull or slightly wrinkled.

Texture: Very soft and can feel mushy or overly yielding. The interior flesh is very soft and sometimes stringy.

Taste & Aroma: The flavor is very intense and almost fermented or alcoholic. Best used immediately for purees, smoothies, or baking.
Fully ripened mangoes can be kept inside the refrigerator, it may increase the shelf life but the taste may vary.
